Shiitake (Lentinula edodes) is a fungus species living on trees, native in East-Asia. It has been used in Far-East medicine for thousands of years for supporting the immune system after illnesses. Cooking it in cattle sinew soup is really useful for maintaining the body's natural self protecting system. It is rich in protein and potassium, its stump contains plenty of zinc and valuable polysaccharides. Uses and administration: Steep shiitake fungus in hot water for cca 1 hour, rinse it with cold water. 5 pieces (cca 20 g) of Shiitake suggested daily. Add to any type of dish, eg. stews or soups.
